Chefs' Experience
After graduation Chris worked as a chef at 40 Main Street Restaurant in Millburn. Subsequently he worked at Il Tulipano in Cedar Grove and at Chez Andre in Maplewood before returning to 40 Main Street Restaurant as Executive Chef for eight years. There he organized and carried out functions in excess of 600 people. These include Mercedes Benz of Manhattan, former Governor Christine Todd Whitman, the Irish and Italian World Cup Soccer Teams, as well as an eight-day, multi-meal seminar for 700 people at Lucent Technologies in Murray Hill for three years in a row. While at 40 Main, Chris served as a guest chef at the James Beard Foundation. Chris was then hired by Laurence Craig Catering to run the food service operation at the Orange Lawn Tennis Club for one year.
Jim began working while at Seton Hall Prep at Rock Spring Country Club and Pal's Cabin. It was at 40 Main Street Restaurant that Jim and Chris met. Later, as Executive Chef at the Association of the Bar of the City of New York in Manhattan, Jim gained experience in serving large groups. His family-owned restaurant, Richard's Café Amèricain which opened in 1991 in Madison, received excellent reviews including, "New Hits of 1992" in the New York Times. Several years later Jim moved to the Executive Chef position at Cavalier Café in Clifton from 1994 to 1997.
As Executive Chef of Laurence Craig Catering for five years, Jim was involved in menu planning, ordering, and execution of a multitude of galas. He worked to provide fine cuisine for fundraiser events at the Newark Museum, the Montclair Art Museum, Morristown Memorial Hospital, and the Brooklyn Museum of Art. The annual United States Equestrian Team event lasted six days and involved two meals per day for approximately 500 people for a number of corporate sponsors. At two "Pink Tie Galas" for The Susan G. Komen Foundation, Jim served 1200 and 1400 people, respectively. He also worked with Chris on the first of three Lucent events and a number of the fundraisers at the Governor's Mansion hosted by former Governor Whitman, in addition to many other galas, Seders, weddings, private dinners and celebrity events.
