Quick to make the most of seasonal ingredients, Terra Luna seeks out the freshest local produce as well as meat, fish, and poultry. You will never sample a seared sesame-crusted yellowfin tuna without knowing that it is sashimi-grade and absolutely fresh. Both chefs are veterans of the 3 a.m. fish "runs" to Fulton Market!
Having had such a wide array of experiences, each has established long-lasting relationships with top-notch vendors. Because these chefs have such good rapport with the providers, they are able to secure the best ingredients available even, at times, on short notice. Longevity counts and their preparation shows it.
Terra Luna is well-known for its innovative, eclectic menus. Chris and Jim recently prepared a corporate cocktail party for a client requesting a Mid-Eastern and Indian theme. In addition to the traditional Mediterranean hummus, pita and baba ganouj, they served a shrimp red curry with couscous salad complete with such Bombay specialties raita, naan and papadoms.
International cuisine and fusion fare are not their only strengths. Both are capable of serving traditional favorites. They have had much experience in preparing for Seders and other holiday celebrations. Jim's matzoh kugel, chopped chicken livers, and chicken soup with knedels have a reputation of their own. It is that degree of flexibility and the extent of their professional CIA training that makes such a difference in what Chris and Jim present.
